Hold on, you say? Canned green beans are what? Not your favorite veggies? (*GASP*)
You can make these with fresh green beans, frozen green beans, or beans in a can. However, if you want to stay true to Justin's camp-food tradition, they have to be cut green beans in a can. These do originate from Justin's camping vittles repertoire, so don't expect gourmet cooking out in the sagebrush. We like them both at home and camping. Since I don't get out camping much, the only chance I eat these is at home.
Now, if you want to elevate them to something gourmet, use fresh beans and steam them. You could even add some chopped fresh herbs if you had some laying around, say from the garden.
Let's stay super simple today. Get out a microwaveable dish (I used my Pampered Chef Micro-Cooker). Bust out the EVOO and vinegar and let's get busy for all of 5 minutes.
Yeah, 5 minutes is all it takes. And three of them are with the microwave running.
1 15-oz. can low sodium cut green beans, or 1 lb fresh or frozen green beans (haricot verts)
1 Tablespoon extra virgin olive oil
2 Tablespoons red wine vinegar
salt and fresh cracked black pepper to taste
optional: dash of dried herbs, basil, oregano or Italian seasoning
1. Open can of beans. Pour beans and liquid into microwave dish. Cover. Microwave about 3 minutes. If you're camping, pour beans and liquid into a pot and warm over the fire.
2. If you're using fresh beans, wash them well. Trim stems and chop to about 2" pieces. Steam until al dente. Or microwave about 5 minutes.
3. Drain beans. Toss with olive oil, vinegar, salt, pepper, and herbs. Serve warm.
